What to do with leftover turkey? Make these easy, tasty croquettes. This recipe makes about 8 croquettes. What to do with leftover croquettes? Slice them and make croquette sandwiches with a little mayonaisse. We are nothing, if not frugal around here.

2 cups cooked turkey
meat
1 cup stuffing
1/2 to 1 cup turkey gravy, depending on how dry the stuffing is.
1 egg
1 Tbs. lemon juice
1 cup breadcrumbs, more or less
Preheat the oven to 400°F.
Put the turkey in a food processor and give it a few churns to chop it up. Put the gravy and stuffing in and give it a few whirls to blend it. Beat the egg and mix the lemon juice with it. Take up about 1/3 of a cup of turkey mixture, form it into a ball, dip it into the egg mix and then roll it in the crumbs.
Form the ball into a cone shape. Spray a baking pan and put the cone on the pan. When all the cones are done, spray them with the oil. This will oven fry them and give them more of the traditional deep fried aspect but will be much lighter. Bake at 400°F for 30 minutes, or until brown and crispy. Heat up some more leftover gravy or make a white sauce and sprinkle with paprika when served.
